Plane & Level offers an intimate bar and Spanish tapas dining experience set in an elegant aviation themed atmosphere.

Our Executive Chef, Orlando Amaro curates exclusively locally grown organic produce from nearby farms, meats and seafood from local suppliers and pairs this with imported ingredients from Spain to create his Spanish inspired tapas menu, which changes seasonally. 

Our unique wine program is unlike any other in the region.  All of our wines are exclusive to Plane & Level.  From selection, to importing to your table, these wines are not available for purchase anywhere else in the state of Alabama.  Our servers guide guests through our extensive wine list to curate the perfect wine for each palate and to accompany each dish.

Whether sharing a meal with family and friends, enjoying a girls’ night out, celebrating a milestone or entertaining clients, at Plane & Level, you will always receive first class service, elevated tapas and true southern hospitality.

Thomas Perez

Orlando Amaro

Thomas Perez, a native of El Salvador with nearly 25 years of experience, is a world-class sommelier and Co-Founder of Plane & Level. Graduating as an oenologist from Spain’s Escuela Superior de Enologia del Pais Vasco, he honed his winemaking skills under renowned mentors like Fidel Fernández and Jean François Coche. Perez’s expertise led him to create exquisite wines at Kristi-Lynn Wine, representing varietals from California, Oregon, Argentina, and Spain. Recognized as a top wine expert, he has worked at acclaimed establishments like Aubergine L’Auberge Carmel and The Inn at Dos Brisas.

Chef Orlando Amaro was born in Venezuela, where his Italian grandmother, a pastry chef, helped nurture his passion for gastronomy in a diverse culinary environment. He pursued this passion at the renowned Culinary Institute of Mexico. The journey led him to Spain, where he had the privilege of working under the tutelage of Chef Ferran Adrià at the Michelin 3-star restaurant El Bulli, immersing in the innovative realm of molecular gastronomy. Chef is driven by a desire for continuous growth, exploration of the culinary world, conceptualizing and opening restaurants worldwide. With 25 years of experience in kitchens worldwide he has specialized in Italian, French, and New American cuisine.
